Proof that healthy NEVER has to be boring!
Here’s my go-to salad bowl formula:
- a roasted veg (for that softly caramelised sweetness)
- crunchy fruits (for a sweet balance)
- roasted nuts and seeds (for that toasty touch)
- creamy protein-rich cheese like feta or ricotta (paneer or cottage cheese works too!)
- a deliciously healthy dressing that’s startlingly light (here I’m whisking together a lemon vinaigrette)
