VANILLA CAKE RECIPE
•INGREDIENTS•
2.5 cups Cake flour
1.5 cups caster or granulated sugar
1.5tsp baking powder
Pinch of salt
250g softened butter (you can also use margarine but butter is better)
2tsp vanilla extract or essence
3 eggs at RT
1 cup fresh milk at RT
•METHOD•
First things first. Preheat the oven to 350F or 180deg C. Sift together the dry ingredients and set aside.
1. Cream the sugar and butter in a bowl until light and fluffy. I normally do this process with a Kitchenaid Stand mixer for 10mins.
2. Crack the eggs into a bowl first not directly into the cake mixing bowl; to avoid a rotten egg or egg shells getting into your cake batter. Add the eggs one at a time while mixing. I do this on speed 2.
3. Add vanilla extract or essence
4. Add sifted flour with baking powder and salt in 3 parts, beginning and ending with the flour.
So
a) flour then half cup milk - mix on low until combined
b) flour then remaining half cup of milk - mix on low until just combined
And lastly flour - use a spatula or whish to fold or gently stir until combined.
DO NOT OVERMIX - you get a dense cake
5. Divide the batter between 2x8 inch cake tins. This also makes 24 standard cupcakes.
Bake at 350F or 180deg C for about 24-27mins and until a toothpick comes out dry when you poke the cake.
Frost it with some whipped cream or whatever you like 👍
