*No Bake Cheesecake* _Recipe by Lia_ Serves: 8-10 slices Prep Time: 25 minutes (plus chilling) Baking Time: 10 minutes Setting Time : Minimum 4 hours 🏋🏽 Intermediate Please note that this recipe is very easy to prepare however what makes it challenging for some is that it has different components to it making it challenging to follow. Step 1: The Base Step 2: The filling Step 3: The topping *INGREDIENTS* _For the Base:_ 200 g digestive biscuits (or graham crackers) 100 g unsalted butter, melted _For the Filling_ 250 g cream cheese, softened 100 g powdered sugar 1 tsp vanilla extract 250 ml fresh cream (cold, for whipping) 1 tbsp lemon juice _For the Strawberry Topping:_ 400 g fresh strawberries, halved 50 g sugar 1 tbsp cornstarch 2 tbsp water *INSTRUCTIONS* *_Step 1: Prepare the Base:*_ 1. Crush the biscuits into fine crumbs using a food processor or by placing them in a ziplock bag and using a rolling pin. 2. Mix the crumbs with melted butter until evenly combined. 3. Press the mixture firmly into the base of a 20 cm springform pan. 4. Bake in a preheated oven at 180°C for 10 minutes. Let it cool completely. *_Step 2: Make the Filling:_* 1. In a large bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth. 2. Add lemon juice and mix well. 3. In a separate bowl, whip the fresh cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture. 4. Spread the filling evenly over the cooled base. Smooth the top with a spatula. 5. Chill in the refrigerator for at least 4-6 hours or overnight. _*Step 3. Prepare the Berry Topping:*_ 1. In a small saucepan, combine 150 g of the fresh berries, sugar, cornstarch, and water. Cook over medium heat until the mixture thickens and becomes syrupy. Let it cool. 2. Arrange the remaining fresh berries on top of the cheesecake. 3. Pour the cooled berry sauce over the fresh berries. _*Step 4.
