Rainbow Veggies
- cut veggies of your choice in bite size pieces and take a heavy bottom kadai or wok.
- Add some ghee or oil of your choice and the flame should be high and the pan should be very hot (this step will be repeated for every round of vegetables we’ll cook.
- Add mushroom + white sesame seeds
- Add broccoli + garam masala + black pepper
- Corns + Kashmiri mirchi
- Carrots + black sesame seeds
- Cut tomatoes and add Balsamic vinegar (if you don’t have it then add vinegar/lemon + little soy sauce + a pinch of sugar) keep this aside for 2-3 hours and let it marinate.
- Now add all the veggies together in the pan and mix.
- Add dry fruits of your choice.
- You can add salt now but if you’re meal prepping and have a big batch then don’t. Only add salt to the part you’re eating.
- Eat it as is or add it with other meals. I mostly add egg with it while serving it. You do you and enjoy the rainbow 💚🩷🩵🧡
