Atta bread
- 3 cups atta ( my atta had jowar bajra chana Jau, soya bean and normal wheat)
- 1 cup warm water
- 1 cup warm milk
- 2.5 tsp activated yeast (you take yeast, add little sugar granules and pour over some warm water over it and keep it aside undisturbed for 15 minutes. It should double in size & form bubbles. If you add hot water then it dies. Watch some YouTube tutorial if doing this for the first time)
- Mix everything and keep it aside covered with a kitchen towel for an hour or two. It will double in size now.
- Now add little butter + honey and lemon juice to the mixture and knead it with hands or stand mixer for 10-15 minutes. It will be very sticky but don’t give up. Oil your hands and do it and it will come together like it always does.
- Now oil a bowl/plate and shape the bread as per your choice.
- Now is the time to add sesame seeds, mix seeds if you want to.
- Keep it covered with a cloth again for sometime. It will double in size. Now don’t touch the bread and bake.
- Bake in oven for 25-30 minutes at 180.
- If using Kadai as oven then let it bake for 50min - 1 hour
You can store it upto a week in the fridge.
