Queen cakes recipe Queen cakes Ingredients 1½ cup cake flour ½ cup castor sugar 2 level teaspoons baking powder 3 medium-sized eggs Zest and juice from 1 orange or lemon ½ cup margarine ¼ cup milk Pinch of salt Method 1. Preheat oven at 180 degrees Celsius. 2. Cream margarine and castor sugar until white and fluffy till sugar has dissolved. 3. Sift flour, salt and baking powder. 4. Add the eggs one at a time and add a bit of flour to prevent curdling, fold in the rest of the flour, and add the zest and orange juice and milk. 5. Spoon mixture into the muffin cases or greased muffin tins and bake on the top shelf oven for 20 t0 25 minutes.
