*Salwaa’s Red Thai Prawn Curry*

I made my own paste but these red thai curry paste is readily available at supermarkets
_Ingredients for the red curry paste:_
2 tsp whole coriander
1 tsp whole jeera
2 red chillies use more or less
2 shallots
peeled 2 stems lemon grass trimmed or 1 dried lemon grass
1 tsp freshly grated ginger
4 cloves garlic
peeled Zest and juice of 1 lemon
1 tbsp hot paprika
1 small red pepper deseeded and roughly chopped
4 kaffir lime leaves
Olive oil
Grind all the above in a paste or liquidised ( i used half and froze the other half)
Remaining Ingredients
1 kg deshelled and deveined large prawns
2 Tbsp cooking oil
Thai Curry paste (above)
1 Tbsp garlic and ginger paste
1/2 to 1 tin of coconut milk
2 Tbsp fish sauce
2 tsp sugar optional
Handful of chopped fresh basil for garnishing
Method
Warm oil
Add half of the red curry paste
Add garlic and ginger paste
Cook for about 10 - 15 minutes or so on medium heat. Don’t add water
Add fish sauce, coconut milk and sugar optional
Cook for a further 5 minutes or so.
Add prawns and stir for a couple of minutes
Garnish with fresh basil
i served mine with a coconut rice
