Healthy Avocado Chicken Salad 🥑🍗 Ingredients - 2 boneless, skinless chicken breasts - 1 tablespoon olive oil - Salt and pepper, to taste - 1 ripe avocado, diced - 1/4 cup Greek yogurt - 1 tablespoon Dijon mustard - 1 tablespoon lime juice - 1/4 cup red onion, finely diced - 1/4 cup cucumber, diced - 1/4 cup cherry tomatoes, halved - Fresh cilantro for garnish Instructions 1. Heat olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper, then cook for 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and let rest for a few minutes before slicing into thin strips. 2.
