*Creamy Pumpkin Soup*

*INGREDIENTS*
1 kg fresh pumpkin, cubed
1 medium onion, chopped
3 cloves garlic, minced
1 tsp cinnamon
1 tsp ginger, grated
½ tsp cardamom
1 L chicken / vegetable stock
200 ml fresh cream
1 tbsp olive oil or butter
Salt and pepper to taste
1 tbsp chia seeds
1 tbsp sesame seeds
2 tbsp chopped almonds
*INSTRUCTIONS*
1. In a large pot, heat the olive oil or butter over medium heat.
2. Add the chopped onions and sauté until soft.
3. Stir in the garlic, cinnamon, ginger, and cardamom, cooking for about 1 minute until fragrant.
4. Add the pumpkin cubes and mix well to coat with the spices.
5. Pour in the chicken stock and bring to a boil.
6. Reduce the heat and let it simmer for 20–25 minutes until the pumpkin is soft.
7. Remove from heat and blend the soup until smooth using a hand blender or regular blender.
8. Return to the pot and stir in the fresh cream.
9. Season with salt and pepper to taste.
10. Ladle the soup into bowls.
11. Sprinkle with chia seeds, sesame seeds, and chopped almonds.
12. Serve hot and enjoy!
