**From Struggle to Success: How Butter Chicken Built a ₹100+ Crore Empire**
In the chaos of the Partition in 1947, three men fled from Pakistan to India with nothing but hope—and a humble clay tandoor.
Kundan Lal Gujral, Kundan Lal Jaggi, and Thakur Das Magu arrived in Delhi penniless, homeless, and desperate to survive. With no resources, they set up a small eatery in Daryaganj, cooking tandoori chicken straight from their tandoor oven.
One fateful night, with leftover tandoori chicken and no refrigeration, they faced a dilemma. Wasting food wasn't an option. Driven by necessity, they experimented.
They tossed the dry chicken into a tangy tomato gravy, added butter and cream for richness—and unknowingly created Butter Chicken, a dish that would become a culinary sensation.
By 1960, their humble eatery, Moti Mahal, was the talk of the town. Dignitaries like Jawaharlal Nehru, Richard Nixon, and the Shah of Iran dined there, cementing its reputation as a global icon.
But it wasn’t just about food—it was a story of resilience and innovation. What began as a small eatery transformed into a thriving business:
• 115+ outlets worldwide
• Franchise margins of 35-40%
• EBITDA growth of 89.45% in recent years
Monish Gujral, the grandson of Kundan Lal Gujral, carried the legacy forward, taking Moti Mahal global and ensuring its place in culinary history.
The journey of these three men is a powerful reminder: You don’t always plan success. Sometimes, it’s born out of necessity, determination, and a pinch of creativity.
So, when life throws you leftovers, remember—there’s always a chance to create your masterpiece.
