Dates Molasses 1
Saweeq drink pairs well with honey, molasses, and jaggery (GUR). Here's a simple recipe to make dates molasses at home:
Ingredients:
- 5 kg dates (including stones, which are beneficial for heart health)
- 10 liters water
- Optional: fennel seeds (Saunf) and cardamom for added flavor
Instructions:
1. Boil the dates and water mixture for 2 hours, as date stones are cure for heart, it releases the natural oil, sugar and nutrients while boiling, so its better not to remove the seeds.
2. The resulting mixture will have a sugar content of around 30-35%, which can be measured using a digital Refractometer to check the Brix value.
3. Filter out the pulp properly to reserve the brownish syrup.
4. Add 100 ml of good quality vinegar as a preservative and boil for another 60 minutes at low heat. This will raise the Brix value to 70-75.
5. Strain out impurities that float as foam on top.
6. After boiling and filtration losses, you'll be left with approximately 3 kg of dates molasses.
7. Let the molasses cool, then fill in the sterilized dry bottles.
The resulting dates molasses will have a similar consistency to honey, which has an 80 Brix value. To make a glass of Barley's Saweeq drink (Sattu), mix 2 tablespoons of Sattu with 2 tablespoons of dates molasses. Adjust sweetness to taste. You can also use dates molasses in Talbinah, HAIS, cakes, and other recipes.
This recipe can also be adapted to make Black-strap Molasses with Jaggery (GUR Ka Sheera).
