The following are its beneficial uses:
- *Cancer* - the sulforaphane found in arugula obtains cancer fighting powers. It inhibits the enzyme histone deacetylase that is known to aid in the progression of cancer cells. It also contains chlorophyll which blocks the carcinogenic properties of some things called heterocyclic amines.
- *Athletic Performance* - arugula contains nitrates that have been shown to improve muscle oxygenation during exercise as well as enhancing exercise tolerance during long term endurance exercise. It is a good enabler of nitric oxide production, which in turn discourages hypertension and boosts blood supply.
- *Osteoporosis*- arugula contains an adequate amount of vitamin K which decreases the risk of bone fracture and improves calcium absorption which can prevent osteoporosis!
* *Diabetes* - alpha lipoic acid present in arugula lowers glucose levels, increases insulin sensitivity and prevents oxidative stress induced changes in those with diabetes.
Arugula is a main ingredient to a fresh salad but can also be incorporated into pastas, casseroles and sauces. I personally use it in making of sauerkraut.
