Blueberry rocks scones
6 cups all purpose flour
6 tsp baking powder
1 cup sugar ( use it to your liking)
Pinch of salt
1/2 cup coconut flakes
300g butter
2 cups buttermilk
3 medium eggs
1 tsp vanilla extract
1 cup blueberries
30g lemon zest
Method
In a bowl add all the dry ingredients , then add butter 🧈 rub together to form sandy texture . Add the lemon zest.
In a separate bowl mix eggs, milk and vanilla extract .
Mix dry ingredients and milk mixture, mix to form a dough then fold in the blueberries. Scoop the dough using the spoon 🥄 into the baking tray.
Bake at 180 degrees for 25 minutes or until golden brown and well cooked.
NB: always preheat the oven before baking.
