3cups flour
3teaspoons baking powder
3tablespoons cornflour
7eggs
4 tablespoons lemon juice
4 tablespoons zest
1cup strong black tea
1teaspoon soda
2teaspoons ginger
1 teaspoon lemon paste
1teaspoon mixed spice
1teaspoon cinnamon
1/2cup treacle
2teaspoons vanilla
2teaspoons vinegar
3/4cup milk
1 and halfcup sugar
3/4 cup cooking oil
2teaspoon vanilla
Sift flour,baking powder,cornflour,ginger, cinnamon and mixed spice six times and set aside.
Grease and line the bottom of your 2 by 8inch tins or 2 by 9inch tins.Brew a strong cup of tea. Add treacle and soda to the tea and mix then set aside to cool.
In two mixing bowls separate eggs,one with egg yolk and the other one with egg white and set aside. Add vinegar to the egg white. To the egg yellow bowl add oil,milk,lemon juice,lemon zest,tea mixture,1cup sugar and essence.
Whisk until well blended and sugar is dissolved.
Beat the egg whites until firm then you gradually start to add the sugar until finished. Beat until soft picks start to form.
To the egg yellow bowl add flour in three batches and mix using direction until well blended.
Do not over mix.
Lastly fold in the egg whites in three batches until well blended. Pour into your greased and lined tins.
Bake at 160degrees for 45minutes to 1hour.
Notes
You put you tea to wet ingredients when it's Luke warm.
You can add a cup of mixed fruit for a fruity Ginger cake
You can also add 100g of halved cherries for a cherry Ginger cake

3cups flour
3/4cup cocoa powder
3cups old fashioned sugar
2cups brewed coffee( hot water plus four teaspoons coffee)
9eggs separated
1/4cup cornflour
2teaspoons vinegar
45g ovelate or margarine
3/4cup oil
2teaspoons vanilla
4 and 1/2 teaspoons baking powder
15 drops sunroma brandy essence
2teaspoons vanilla essence
Prepared 3x8 inches tins or 4x7 inches tins.
Sieve flour,baking powder and cornflour six times and set aside.
Brew your coffee and put into a medium mixing bowl.Add coco powder and whisk until combined.Add sugar,oil,ovelate and essence whisk until blended.
In two bowls separated eggs one with eggwhites and the other with egg yellow.
To the egg white bowl add vinegar and set aside.
Add egg yellow to the cocoa mixture and whisk until well blended.
Beat eggwhites until glossy and firm for 5 -10 minutes.
In you cocoa mixture add flour in three batches and whisk using one direction..
Lastly fold in your eggwhites in batches until well blended.
Pour into your prepared tins and bake for 45mins to 1hour.

2 cups cake flour
3 teaspoons baking powder
1/4 cup cocoa powder
1½ cups castor sugar
½ cup sunflower oil
1/2cup brewed coffee
2tablespoon cornstarch
1 cup fresh milk
6 XL eggs,
separated
2teaspoon vanilla essence
2teaspoon vinegar
*Method*
1. Preheat the oven to 180ºC. Line and grease 2x8inch tins.
2. Sift the flour, baking powder, cornstarch, and
cocoa powder 6 times.
3. Boil coffee, when done,boil milk and coffee and set aside to cool
4. In two large mixing bowls, separate egg yellow into the other and the other one with egg whites.Add vinegar to the eggwhites bowl and set aside.
5. In the egg yellow bowl add 3/4 of the sugar, coffee mixture,vanilla essence,oil and whisk until sugar is dissolved.
6. Beat eggwhites until glossy then gradually start to add the other half of the sugar and beat untill soft peaks form.
7.ln the egg yellow bowl add the flour in three batches and cold in until combined using one direction and blended.
8.Lastly fold in eggwhites in smaller amounts until finished and well combined and blended.
9. Pour the batter into the greased and lined tins. Bake for 55-60 minutes.

2cups flour
3teaspoons baking powder
2 tablespoons cornflour
4 tablespoons cocoa powder
3eggs
1 cup sugar
1 cup milk
1/2 cup oil
1/2 cup brewed coffee(1/2cup hot water plus 1 teaspoon coffee)
2 teaspoons vanilla essence
Prepare two by 8 inch tins and set aside.
1)Boil milk with half of the brewed coffee and set aside to cool
2)Sift flour, cornflour, cocoa powder and baking powder six times and set aside.
Mix sugar and eggs until pale yellow and creamy.
3)Add oil and mix until well blended.
4)Add the coffee and milk mixture and mix for a few minutes.
5)Add vanilla then flour in batches mixing after each addition until well blended.
6)Do not overmix
7)Pour batter into your prepared tins.
8)Bake at 160degrees for 45minutes to 1 hour.
Notes
1)You can use any coffee that you fancy
2)This recipe is also ideal for cupcakes.

Four tablespoons lemon juice
10 XL eggs,
separated

*Method*
1. Preheat the oven to 180ºC. Line and grease 3x8inch tins or 2 by 9 inch tins
3. Sift the flour, baking powder, cornstarch, salt and
1cup of the castor sugar 6 times.
3. In a separate bowl, beat the oil, tropical dairy drink,egg yolks,lemon zest,lemon juice,and vanilla essence,brandy essence,orange essence and orange jelly until
pale and yellow and stir into the flour mixture.
4. In a large mixing bowl, beat the egg whites with the vinegar until glossy and gradually add the sugar( 1 and a 1/4 cups) and beat until
soft peaks form and they are stiff
6. Using a metal spoon gently stir a third of the egg white mixture into the batter to lighten it before folding in the remaining egg whites. Scrape the bottom of the bowl to ensure the batter is well blended.
7. Pour the batter into the greased and lined tins. Bake for 55-60 minutes.

In two medium mixing bowl separate eggs in the first one put egg whites into the other one add egg yellow. In the egg whites bowl add 2teaspoons vinegar.
In the egg yellow bowl add oil,milk,sugar,essence and vinegar and whisk until sugar is well blended. Beat the egg whites until glossy and firm. Open a hole in your flour mixture then add egg yellow mixture and whisk using one direction until well blended. Lastly fold in your egg whites until combine. Pour your butter into your tins. Bake at 160degreese for 45 minutes to 1 hour.

Method
line 3x8inch or 2x9inch tins on the bottom only
Separate eggs into two bowls, one with egg whites and the other one with egg yolk. In the egg yellow bowl crack three eggs into it.
Add vinegar to the egg whites and set aside
Add 3/4cup sugar,to the egg yolk bowl and whisk until well blended, till custard like
Then add cooking oil to the egg yolk mixture and whisk for 2 mins add milk, and essence.
Beat egg whites and vinegar until frothy and gradually add 3/4 cup of sugar till glossy kind of.
Sift flour,cornflour and baking powder together six times.
Add flour to the egg yolk mixture and mix using one direction.
Fold in egg whites to the egg yolk mixture and mix until well blended.
Divide your mixture into equal parts to your tins
Bake for 45minutes to 1hour at 160degrees

Ingredients
1½ cups flour
1⅓ cups sugar
½ cup cocoa powder
1¼ teaspoons bicarbonate of soda
1½ teaspoons baking powder
½ teaspoon salt
2 large eggs
1 cup fresh milk
½ cup cooking oil
½ cup boiling water
2 teaspoons vanilla essence
Chocolate frosting
½ cup stork white margarine (soft)
½ cup cocoa powder
3 cups icing sugar
60ml fresh milk
Method
Preheat oven at 170°c
In a big bowl sieve flour, cocoa powder, sugar, bicarbonate of soda, baking powder, salt and mix together.
In another bowl add eggs, oil, milk, vanilla essence and beat until combined.
Add dry ingredients to the eggs and milk mixture and mix well.
Add hot water and mix until combined.
Pour batter into prepared baking tins and bake for 35-40 minutes
For frosting
Beat margarine till creamy.
Add icing sugar,cocoa, vanilla essence, milk and beat until combined.
Moist carrot cake
Ingredients
2 cups flour
1½ cups sugar
2½ cups grated carrot
3 large eggs
1 cup cooking oil
2 teaspoons baking powder
1 teaspoon bicarbonate of soda
2 teaspoons cinnamon powder
1½ teaspoon vanilla essence
½ teaspoon salt
Method
Preheat oven at 160°c
In a bowl add eggs,cooking oil, vanilla, grated carrot and sugar and mix well.
In another bowl sift flour, baking powder, bicarbonate of soda, cinnamon powder and salt.
Combine dry ingredients with wet ingredients and mix well, don't overmix your batter.
Transfer your batter to a lined and greased pan and bake for 30-35 minutes.
I've used 7 inches x 2 baking pans.
All your ingredients must be in a room temperature.
Cream
2 cups icing sugar
100g wooden spoon
1 teaspoon vanilla essence
2 tablespoons fresh milk
Cream margarine, add icing sugar,vanilla,milk and mix well.

1/2 cup vegetable oil
2 large eggs
2 teaspoons vanilla extract
1 cup brewed coffee
1/4 cup cornflour
2tablespoons treacle
For the Frosting:
1 cup unsalted butter (softened)
3 1/2 cups powdered sugar
1/2 cup unsweetened cocoa powder
1/2 cup buttermilk
2 teaspoons vanilla extract
Pinch of salt
Directions:
1. Preheat your oven to 160 degrees. Line 2-3 by 8inch tins or two by 9-inch round cake pans.In your hot coffee add 1/4cup of cocoa powder then half cup you will add to the flour
2. In a large bowl,sieve together the flour, cocoa powder,cornflour baking powder, baking soda, and salt six tmes.Add sugar and whisk
3. Add the buttermilk, vegetable oil,treacle,eggs, and vanilla extract to the dry ingredients. Mix until combined.
4. Gradually add the coffee mixture to the batter, mixing well until smooth. The batter will be thin, but that's okay.
5. Pour the batter evenly into the prepared pans and bake for 45 minutes to 1hour or until a toothpick inserted into the center comes out clean.
6. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
7. In a large bowl, beat the softened butter until creamy.
8. Gradually add the powdered sugar and cocoa powder, beating until well combined.
9. Add the buttermilk, vanilla extract, and salt. Beat until the frosting is smooth and fluffy.
10. Once the cakes are completely cooled, spread a layer of frosting on top of one cake layer. Place the second cake layer on top and frost the top and sides of the cake.
