For making vinegar, you need water & sugar from the fruit and we have the following variations :
1. Fruits with high water & good sugar content, such as sweet pomegranates and grapes ~ they are the best for making vinegar
2. Fruits with high water & low sugar, such as apples, pears, pineapples ~ you need some sugar addition for a better fermentation & high acidity strength in their vinegars
3. High pulp fruits with low water & moderate to low sugar content, such as PLUMS, Guava, banana, apricots ~ you need both water & sugar addition for having their vinegars
4. Dried fruits with high sugar percentage, such as dates & dried figs ~ you need to add water for brewing their vinegars
