*Lia's Mexican Taco Pie*
*Ingredients:*
- 1 lb ground beef (or ground turkey, chicken, or beans for a vegetarian option)
- 1 packet of taco seasoning
- 1 cup tortilla chips, crushed
- 1 cup shredded cheese (Cheddar or Monterey Jack work well)
- 1 can (16 oz) refried beans
- 1 can (14.5 oz) diced tomatoes, drained
- 1/4 cup chopped fresh cilantro
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 1 egg, beaten
- 1 tablespoon olive oil
*Instructions:*
1. *Preheat oven:* Preheat the oven to 350°F (180°C).
2. *Cook the ground beef:* In a large skillet, cook the ground beef over medium-high heat until browned, breaking it up into small pieces as it cooks. Drain excess fat and add taco seasoning according to package instructions.
3. *Prepare the crust:* In a bowl, mix together crushed tortilla chips and a pinch of salt.
4. *Assemble the pie:* In a 9-inch pie dish, press the tortilla chip mixture into the bottom and up the sides to form the crust.
5. *Layer the filling:* Spread the refried beans over the crust, followed by the cooked ground beef, diced tomatoes, chopped cilantro, diced onion, and diced bell pepper.
6. *Top with cheese:* Sprinkle shredded cheese over the top of the pie.
7. *Bake:* Bake the pie for 25-30 minutes, or until the cheese is melted and bubbly.
8. *Serve:* Serve hot, garnished with additional cilantro, diced tomatoes, or sour cream, if desired.

- Use store-bought taco seasoning for convenience, or make your own blend with chili powder, cumin, and paprika.
- Customize the filling with your favorite taco toppings, such as diced jalapeños or sliced black olives.
