*Lia's recipe for sushi muffins:*
*Ingredients:*
- 1 cup Japanese short-grain rice
- 1/2 cup water
- 1/4 cup rice vinegar
- 1/4 cup crab stick, shredded
- 1/2 avocado, diced
- 1/2 cucumber, diced
- 1 sheet of nori seaweed, cut into small pieces
- Sesame seeds and soy sauce for garnish
*Instructions:*
1. Preheat oven to 375°F (190°C).
2. Prepare sushi rice according to package instructions.
3. Mix rice with rice vinegar and let it cool.
4. In a bowl, combine crab stick, avocado, and cucumber.
5. Add nori seaweed pieces to the mixture.
6. Spoon sushi rice into a muffin tin and top with the crab mixture.
7. Bake for 10-12 minutes or until lightly toasted.
8. Garnish with sesame seeds and soy sauce.
