*Recipe by Lia: Crispy Cornflake Chicken*
Hey guys! 👋 Today I'm sharing my fave recipe for crispy cornflake chicken. It's super easy and delicious! 😋
*Ingredients:*
- 1.3 lbs chicken tenders or breast, sliced into strips
- 5 cups crushed cornflakes (I like to use a mix of cornflakes and Panko breadcrumbs for extra crunch)
- 1/3 cup flour
- 2 eggs, beaten
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper (optional)
*Instructions:*
1. Preheat your oven to 390°F (200°C). Line a baking tray with parchment paper.
2. In a bowl, mix together flour, paprika, salt, onion powder, garlic powder, black pepper, and cayenne pepper (if using).
3. In another bowl, beat the eggs.
4. In a third bowl, crush the cornflakes into a texture similar to Panko breadcrumbs.
5. Coat each chicken strip in flour, then egg, and finally cornflake mixture, pressing gently to adhere.
6. Place the coated chicken on a wire rack over the prepared baking tray. Spray with oil.
7. Bake for 15-20 minutes or until golden brown and crispy.
*Tips:*
- For extra crispy coating, chill the coated chicken in the fridge for 30 minutes before baking.
- Serve with your fave dipping sauce, like honey mustard or BBQ sauce.
