*INGREDIENTS*
800g Brussels sprouts, trimmed and halved
2 tbsp olive oil
1 tbsp balsamic vinegar
1 tbsp maple syrup or honey
1/2 tsp salt (or to taste)
1/4 tsp black pepper
1 tsp dried rosemary or thyme
Optional: 2 tbsp chopped toasted nuts (e.g., almonds, pecans) or grated Parmesan for topping
*INSTRUCTIONS*
1. Preheat the oven to 200°C (fan 180°C).
2. In a large bowl, toss 800g halved Brussels sprouts with 2 tbsp olive oil, 1 tbsp balsamic vinegar, 1 tbsp maple syrup (or honey), 1/2 tsp salt, 1/4 tsp black pepper, and 1 tsp dried rosemary or thyme.
3. Spread the Brussels sprouts on a lined baking tray in a single layer, cut side down.
4. Roast for 20–25 minutes until tender and golden brown, tossing halfway through.
5. Optional: Sprinkle with chopped nuts or Parmesan before serving for added crunch or richness.
