======================= 🌟 *Day 2 - Baking Week with Rumbie from ZimboKitchen* ======================= Hello, everyone. Today, some more baking insights & nuggets. There are a variety of reasons you might find yourself needing ingredient substitution when baking. It may be because of allergies, ingredients availability or preference. Let's see: ============ *#1 - Eggs*🥚🥚 ============ Eggs mostly work as a binder. To substitute them, you need something with the same properties as a binder. Mashed banana is a good substitutive binder. For every egg listed in a recipe, use ½ a medium banana. For non-allergic reasons, you can use custard powder (check ingredients, some have egg, & some don't). For every egg listed in the recipe, use 1 tbsp custard powder. ============ *#2 - Flour* 🍰 ============ Recipe needs self-raising flour and all you have is all purpose (plain) flour? No problem. Turn your all purpose flour into self-raising flour by adding 1 level tsp baking powder & ¼ tsp salt to every cup of flour. If the recipe calls for cake flour & again all you have is all purpose flour, for every cup of all purpose flour, remove 2 tbsp & replace them with cornflour (also known as cornstarch). ============ *#3 - Milk*🥛 ============ A key ingredient in baking. Improves the texture & crumb of your baked product also adds moisture to it. For allergy, substitute with soy or almond milk. Water can do but only works perfectly for baking recipes not heavily relying on milk for moisture, richness, flavour & texture of final baked product. Yoghurt can also be a good milk substitute . ========================= *#4 - Make your own buttermilk*🍋 ========================= For a richer baked product, you can use buttermilk or sour milk in place of milk. Make your own by simply adding 1 tbsp of lemon juice to every cup (250ml) of milk. Stir & let it sit for 10 min & it's ready to use. ========================= *#5 - Make your caster sugar* 🧁 ========================= If recipe calls for caster sugar & you only have granulated sugar at hand, make your own caster sugar by blending granulated sugar until the sugar resembles caster sugar! ( you can also use a food processor) *Next up*...a baking recipe to follow later today. 😘😘
