*Mini Custard & Strawberry Scones*

Using the rubbing in technique discussed earlier today, here we have some really tasty, easy to make mini custard scones 😋 . Enjoy!
Makes: 20 mini scones
Takes: 15 min
*Serving Suggestion:* Enjoy with a cup of tea, coffee or some juice

390 g plain (all purpose) flour
125 g granulated white sugar
40 g custard powder
½ tsp salt
1 ½ tbsp baking powder
½ tsp ground nutmeg
1 punnet fresh strawberries, chopped
1 ½ tsp vanilla essence
125 ml buttermilk
125 ml fresh cream
150 g cold margarine/butter, chopped

1. Get your ingredients together. Preheat the oven to 200°C. Line your baking sheet with baking paper, lightly grease and set aside.
2. Put sugar and salt in mixing bowl. Sift plain flour, custard powder, baking powder and nutmeg into the same bowl with sugar and salt.
3. Cut in the cold margarine/butter using a table knife until the mixture resembles coarse breadcrumbs. Alternatively you may rub in the cold margarine/butter until the mixture resembles coarse breadcrumbs.
4. Make a hole in the middle, add the essence, strawberries, fresh cream and buttermilk. Mix gently until well combined.
5. Lightly dust your working area with flour. Place your dough and roll it out to about 2 cm thick.
6. Use a scone cutter or a glass dipped in flour at the rim to cut your scones out. Place on prepared baking sheet.
7. Bake in preheat oven for 10-15 min or until lightly browned. Allow to cool briefly on the cooling rack. Enjoy!

1. Sour milk (lacto, maas, etc) may be used in place of buttermilk.
2. Caster sugar may be used in place of granulated sugar.
3. Cinnamon powder may be used in place of nutmeg.
