*Ginger Chicken Stir-Fry* _by Rumbie from ZimboKitchen_ Serves: 4 - 5 Takes: 30 min *Serving Suggestion:* Enjoy with rice, pasta or potatoes *========* *GET This* *========* 500 g chicken breast, cubed into bite size pieces 1 ½ tsp salt 1 tsp garam masala 1 tsp finely minced garlic 1 tsp finely mixed ginger 4 tbsp Mr Sauce tomato sauce 2 large carrot, sliced at an angle 2 large baby marrow, sliced at an angle ½ large onion, sliced 1 medium red pepper, chopped 8 spring onion, chopped 3 tbsp Mr Sauce Worcester sauce 2 tbsp oil for frying *=======* *DO This* *=======* 1. Get your ingredients together. Put the chicken, ginger, garlic, ¾ tsp salt and 2 tbsp tomato sauce into a bowl. Give a quick mix until everything is mixed together well. Set aside and allow to marinate for 15 minutes. 2. Heat oil in pan. Add the chicken and fry until cooked (about 10 - 15 min). Remove from pan and set aside. 3. Add the onion to the same pan. Fry for 2 minutes. Add carrot and fry for another 2 minutes. Add baby marrow, red pepper and the remaining 3/4 tsp salt. Cook for 2 more minutes. 4. Return the chicken to the pan. Add Worcester sauce. Fry for 3 more minutes. Add the spring onion and stir. Taste for seasoning and adjust accordingly. Enjoy! *=======* Notes *=======* ✅ Avoid over-crowding your pan. If f need be, you may fry the chicken in 2 batches. Over crowding the pan causes the juices in the chicken to come out and it therefore fails to fry and brown properly. ✅️ Avoid over-cooking the chicken as this will cause it to become dry instead of being juicy and flavourful. ✅️ Avoid overcooking the spring onion as it'll turn bitter. Just a minute, will do it. ✅️ Soy sauce may be used in place of the Worcester sauce. ✅️ Green pepper may be used in place of the red. ✅️ Garam Masala is a spice that can be found at the spices section in most supermarkets. *=======* ZimboKitchen © 2025.
