It’s winter season, and for me that means it’s time for ‘Gajar Mooli ka Achar’ (Carrot Radish Pickle). I love it not just for its flavorful taste, but also its nostalgic value. Takes me back to winter mornings spent in my parents’ home eating Chole Bhature from a local shop nearby, who served this achar along!
And since, Fresh and crisp carrots and Radishes are available in abundance in the market in this season, make this instant gajar mooli ka achar, which is very simple to make.
Shelf Life: 4-5 Days refrigerated, hence make smaller batches.
Ingredients:
Carrots, 3
Radish, 3
Green Chillies, 3-4
Mustard Oil, 3 Tbsp
Fenugreek/Methi Seeds, 1 Tsp
Nigella/Kalonji, 1 Tsp
Cumin Seeds, 1/2 Tbsp
Fennel Seeds, 1/2 Tbsp
Turmeric, 1/2 Tbsp
Coriander Powder, 1/2 Tbsp
Chilli Powder, 1 Tsp
Salt to taste
Asafoetida/Hing, 1/2 Tsp mixed with 100ml water
Tamarind/Imli water, 200ml
Instructions:
1. Peel and slice the carrots and radish. Slit the green chillies.
2. In a kadhai, heat mustard oil, add the seeds and cook for 2-3 minutes. Add in the veggies, sauté for 2 minutes.
3. Add the spices, salt and heeng, tamarind water.
4. Give everything a good mix.
5. Let cool down, transfer to a glass container. Serve as is or refrigerate for upto 3-4 days.
