This has to be the Indian Caviar. Ponkh deserves more love and attention from us. This Crispy Ponkh BHEL PURI is not only Delishaaas but it will win hearts. I wonder why can't we scale a large Ponkh festival in Surat, Gujarat - which people from across India and the the world can come for. It would be so beautiful. Have you tried this young nutty, smoky and mildly sweet and chewy - Jowar ever? Also called Hurda in Maharashtra!
Ponkh Bhel puri

1 cup Ponkh
1 tsp Ginger green chili paste
1 Tomato, diced
1 Onion, diced
A handful of Coriander, chopped
Bhuna jeera powder, to taste
Salt to taste
Juice of 1 lemon
Mix well
A handful of sev
Mix well

1 Red potato, peeled
Slice them thin
Generously sprinkle tapioca starch
Dust off the excess
Stick the two slices together
Cut as shown
Double Fry in hot oil
till GBC 🔥

Stuff them generously
with the ponkh bhel
