Ingredients-
•3 Potatoes - boiled
•1 cup Spinach
•1/2 cup Peas
•2 Tbsps Coriander
•100g Paneer
•1 tsp Jeera Powder
•1/2 tsp Chilli powder
•1/2 tsp Amchoor pwd
•1/2 tsp Garam masala pwd
•3 cloves Garlic
•2 spicy Green Chilli
•1/2” piece Ginger
•3 Tbsps Besan - roasted or bread crumbs
Garlic yogurt dip with beet puree
Ingredients-
•1 cup hung curd
•3 cloves garlic - grated
•1 tbsp Beet puree
•Salt & pepper to taste
•1 Tbsp lime juice
Garnish-
•Coriander
•Cashews
Assembling-
•Roti/paratha
•Pickled Onion
•Chaat Masala
Process:
For the Yogurt Dip-
- Whisk the hung curd to make it nice and smooth
- To it add grated garlic, beet puree , lime juice ,salt and pepper as per taste
- For the Hara bhara kebab-
- Start by boiling the peas for 3-4 minute, in the same water add the spinach for 30 seconds and transfer everything in ice cold water.
- Add that to a blender with coriander, green chilli , ginger ,garlic and blend it to make a smooth paste
- In a plate grate potatoes and paneer together
- To that add green paste, roasted besan, spices like chilli powder, amchur powder, jeera powder , garam masala , salt and pepper.
- Bind it until nicely combined, make small tikkis ,add half a piece of cashew and pan fry it on both sides
- For assembling, heat up the roti , put some beetroot dip at the base, break the tikkis and place them in a straight line, on top add pickle onions, chaat masala and some chopped coriander
- Squeeze some lemon juice on top and your hara bhara roll is ready to be devoured!
