Ingredients For the Crumble Topping: • ¼ cup salted peanuts, chopped • ¼ cup chocolate chips For the Batter: • 1½ cups (240g) all-purpose flour (maida) • 1 teaspoon (5g) baking soda • 1½ teaspoons (4.5g) baking powder • ¼ teaspoon (2.5g) salt • 3 overripe bananas, mashed • 2 teaspoons (10ml) lemon juice • ½ cup (120g) castor sugar • ¼ cup (60g) curd (dahi) • ⅓ cup (55g) melted butter • ¼ cup (60ml) milk • 1/2 cup chocolate chips Method 1. Grease and line a loaf tin with parchment paper. Preheat the oven to 170°C. 2. Mash the bananas with lemon juice and sugar until smooth. Add curd and whisk well. Mix in the melted butter and whisk until fully combined. 3. Sift together flour, baking soda, baking powder, and salt. Toss the chocolate chips with a little flour to prevent them from sinking. 4. Add the dry ingredients to the wet mixture in three parts, alternating with milk. Fold in the flour-coated chocolate chips at the end. 5. Pour the batter into the prepared loaf tin. Sprinkle chopped peanuts and extra chocolate chips on top. 6. Bake at 170°C for 40-45 minutes, or until a skewer inserted in the center comes out clean. 7.
