Just harvested your Vitamin A Orange sweet potatoes? Donโt stop there โ the way you handle them after harvest can make all the difference in how long they last and how nutritious they stay!โ
Start strong by curing your roots right away. This means storing them in a warm, humid space (about 30ยฐC and 85โ90% humidity) for 7 to 14 days. Why? Curing helps heal any small cuts or bruises on the tubers and toughens the skin, making them less likely to rot and more likely to fetch a better price!
Note: please do not wash your sweet potatoes before curing!!
Want to go the extra mile? After curing, keep your sweet potatoes in a dry, dark, and well-ventilated space for up to 6 more weeks. This step keeps them in top shape, whether for home use or the market.
