Donโt stop there โ the way you handle them after harvest can make all the difference in how long they last and how nutritious they stay!โ Start strong by curing your roots right away. This means storing them in a warm, humid space (about 30ยฐC and 85โ90% humidity) for 7 to 14 days. Why? Curing helps heal any small cuts or bruises on the tubers and toughens the skin, making them less likely to rot and more likely to fetch a better price! Note: please do not wash your sweet potatoes before curing!! Want to go the extra mile? After curing, keep your sweet potatoes in a dry, dark, and well-ventilated space for up to 6 more weeks. Try this moist, vitamin-rich cake made with fresh grated orange maizeโa great way to enjoy biofortified goodness at home. Ingredients: โ 3 cups grated fresh orange maize โ 75g sugar โ 150ml cooking oil โ 4 eggs โ 2 cups self-raising flour โ 2 tsp cinnamon โ 1ยฝ cups mixed fruit Method: โ Mix sugar, oil, and eggs in a bowl. โ Sift flour and cinnamon (add 2ยฝ tsp baking powder if using plain flour) โ Combine all ingredients โ Bake at 180ยฐC for 25 mins, then reduce to 120ยฐC for 15 mins Let it cool & enjoy!
