Ingredients:
- Chocolate – 1 cup (200g)
- Butter – 1/4 cup (57g)
- Ground Flax Seeds – 2 tbsp (12g)
- Water – 1/4 cup (60g)
- Jaggery Powder – 1 cup + 2 tbsp (180g)
- Salt – a pinch
- Atta (whole wheat flour) – 1/2 cup (60g)
- Ragi Atta (finger millet flour) – 1/2 cup (60g)
- Coffee Powder – 1 tsp (1.5g)
- Baking Soda – 1/2 tsp (2.5g)
- Cocoa Powder – 2.5 tbsp (13g)
- Milk – 3 tbsp (45g)
- Chocolate Chips – for topping (optional)
- Crushed Walnuts – for topping (optional)
Method:
1. Combine the flax seed powder and water together. Set aside for 5-10 minutes till flax seeds hydrate well.
2. In a pot, add milk and jaggery. Cook on low heat until most of the jaggery dissolves.
3. Add the chocolate and butter to the pot. Cook on low heat until the mixture melts completely.
4. Remove the pot from heat and transfer the mixture into a bowl. Let it cool slightly.
5. Whisk in the flax seed mixture.
6. Sift together the atta, ragi flour, coffee, cocoa powder, salt, and baking soda.
7. Gradually sift the dry ingredients into the wet base, mixing until smooth.
8. Transfer the batter to a lined 7x7-inch square baking tin.
9. Top with chocolate chips and crushed walnuts.
10. Bake in a preheated oven at 165°C for 20 minutes.
11. Insert a skewer to check if the brownies are done. It should come out slightly fudgy.
12. Allow the brownies to cool down.
13. Refrigerate for 10-15 minutes before slicing. Enjoy!
