Ingredients:
For the Thecha:
• 10 green chilies, tops removed
• 8 green garlic cloves, roughly chopped
• 1 tablespoon peanuts
• 1 teaspoon groundnut oil
• 1/2 teaspoon cumin seeds
• 2 tablespoons coriander stems, chopped
• Salt and pepper, to taste
For the Assembly:
• 2 eggs (sunny side up)
• 2 tablespoons thecha
• 1 tablespoon oil
• 2 buns
• 2 tablespoons green chutney
• 2 tablespoons grated cheese
• 1 tablespoon roasted peanuts, crushed
• 1 teaspoon chopped green garlic
Method:
1. Heat a pan and add green chilies. Sauté until they blister.
2. Add peanuts to the pan and sauté until blistered.
3. Add roughly chopped green garlic and sauté for 2-3 minutes.
4. Add oil and cumin seeds to the pan and sauté briefly.
5. Stir in coriander stems and leaves, then remove from heat.
6. Let the mixture cool, then grind it into a coarse paste using a mortar and pestle. Season with salt and pepper.
7. Heat some oil in a pan. Add the prepared thecha and sauté well.
8. Break an egg on top of the thecha and cover the pan with a lid until the egg whites set.
9. Remove the lid and season the egg with salt and pepper. Repeat for the second egg.
10. Toast the buns lightly on a pan.
11. Spread green chutney over the toasted buns.
12. Sprinkle grated cheese on top of the chutney and cover the buns until the cheese melts.
13. Place the buns on a plate and top each with a thecha egg.
14. Garnish with crushed roasted peanuts and chopped green garlic.
15. Serve immediately.
